Ingredients:
- 4 (6-ounce) mahi mahi fillets (170g each)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon salt (5g)
- ½ teaspoon black pepper (2g)
- ½ cup panko breadcrumbs (50g)
- 2 tablespoons fresh parsley, chopped (15g)
- 2 tablespoons fresh basil, chopped (15g)
- 1 tablespoon fresh thyme leaves (5g)
- Zest of 1 lemon
- 2 tablespoons unsalted butter, melted (28g)
- 1 clove garlic, minced
Instructions:
- Preheat the oven to 400°F (200°C).
- Prepare a baking sheet with parchment paper.
- Season mahi mahi fillets with olive oil, salt, and pepper on both sides, and place on the prepared baking sheet.
- In a bowl, combine panko breadcrumbs, parsley, basil, thyme, lemon zest, melted butter, and minced garlic.
- Mix well until the breadcrumbs are evenly coated and have a moist texture.
- Spoon the breadcrumb mixture generously over each mahi mahi fillet, pressing gently to adhere.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the fish flakes easily with a fork.
- Remove from the oven and let rest for a couple of minutes before serving.
