Ingredients:

  • 4 (6-ounce) mahi mahi fillets (170g each)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2g)
  • ½ cup panko breadcrumbs (50g)
  • 2 tablespoons fresh parsley, chopped (15g)
  • 2 tablespoons fresh basil, chopped (15g)
  • 1 tablespoon fresh thyme leaves (5g)
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter, melted (28g)
  • 1 clove garlic, minced

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet with parchment paper.
  3. Season mahi mahi fillets with olive oil, salt, and pepper on both sides, and place on the prepared baking sheet.
  4. In a bowl, combine panko breadcrumbs, parsley, basil, thyme, lemon zest, melted butter, and minced garlic.
  5. Mix well until the breadcrumbs are evenly coated and have a moist texture.
  6. Spoon the breadcrumb mixture generously over each mahi mahi fillet, pressing gently to adhere.
  7. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the fish flakes easily with a fork.
  8. Remove from the oven and let rest for a couple of minutes before serving.
