Ingredients:

  • 1 large red onion, peeled and cut into wedges (approx. 250g)
  • 2 carrots, peeled and chopped into 1-inch pieces (approx. 200g)
  • 2 bell peppers (any color), seeded and chopped into 1-inch pieces (approx. 300g)
  • 1 zucchini, chopped into 1-inch pieces (approx. 200g)
  • 1 head of broccoli, cut into florets (approx. 350g)
  • 4 cloves garlic, minced (approx. 15g)
  • 3 tablespoons olive oil (45 ml)
  • 1 teaspoon dried Italian herbs (5 ml)
  • ½ teaspoon smoked paprika (2.5 ml)
  • Salt and freshly ground black pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and chop all vegetables into roughly the same size pieces.
  3. In a large bowl, toss the vegetables with olive oil, minced garlic, Italian herbs, smoked paprika, salt, and pepper. Ensure everything is evenly coated.
  4. Spread the vegetables in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Roast in the preheated oven for 30-40 minutes, or until the vegetables are tender and slightly caramelized. Toss halfway through cooking for even browning.
  6. Remove from oven and garnish with fresh parsley (if using). Serve immediately.
