Ingredients:

  • 1 cup (240 ml) Milk
  • 1/2 cup (120 ml) Vegetable Oil
  • 1 Large Egg
  • 2 cups (240g) Tapioca Flour/Tapioca Starch
  • 1 teaspoon Salt
  • 1 cup (approx. 100g) Grated Parmesan Cheese
  • 1/2 cup (approx. 50g) Grated Mozzarella Cheese

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a blender or food processor, combine milk, oil, and egg. Blend until smooth.
  3. Add tapioca flour and salt to the blender. Blend until a smooth batter forms.
  4. Stir in the Parmesan and Mozzarella cheeses by hand.
  5. Drop spoonfuls of batter onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until the puffs are golden brown and slightly puffed up.
  7. Let cool slightly before serving. They're best enjoyed warm!
