Ingredients:

  • ½ cup (100g) Popcorn kernels
  • 2 tablespoons (30ml) Vegetable oil (or coconut oil)
  • ½ teaspoon (3g) Salt
  • 4 tablespoons (57g) Unsalted butter
  • ½ cup (50g) Grated Parmesan cheese, finely grated
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 tablespoon Fresh chives, finely chopped
  • ¼ teaspoon Garlic powder
  • ⅛ teaspoon Red pepper flakes (optional)
  • 2 ounces (57g) Prosciutto, thinly sliced
  • Additional Parmesan cheese, for grating (optional)

Instructions:

  1. Heat oil in a large pot over medium-high heat. Add popcorn kernels and salt. Cover and cook, shaking the pot occasionally, until popping slows. Remove from heat and pour into a large bowl. Remove any unpopped kernels.
  2. Place prosciutto slices in a cold skillet over medium heat. Cook until crispy and golden brown, about 3-5 minutes per side. Remove and place on paper towels to drain. Once cool, crumble into small pieces.
  3. In a small saucepan (or microwave-safe bowl), melt butter. Stir in Parmesan cheese, parsley, chives, garlic powder, and red pepper flakes (if using).
  4. Pour the Parmesan herb butter over the popcorn. Toss gently but thoroughly to coat all the kernels.
  5. Sprinkle the crumbled crispy prosciutto over the popcorn. Grate additional Parmesan cheese on top, if desired.
  6. Serve warm and enjoy your movie night snacks!
