Instructions:
- Wash and dry the 2 medium zucchinis thoroughly before slicing into 0.65 cm (1/4 inch) rounds. Note: Surface moisture is the enemy of a crispy crust.
- In a small bowl, whisk together the 0.5 cup Parmesan, 1 tsp garlic powder, 0.5 tsp smoked paprika, 0.25 tsp salt, and 0.25 tsp pepper.
- Place the slices in a large bowl and drizzle with the 1.5 tbsp olive oil.
- Toss for coverage. Use your hands to ensure every single millimeter of the Zucchini Slices with Garlic is coated in a thin sheen of oil.
- Sprinkle the Parmesan mixture over the oiled zucchini.
- Toss again gently until the cheese clings to the flat sides of the slices.
- Preheat the fryer. Set your air fryer to 200°C (400°F) and let it run for 3 minutes.
- Place the slices in a single layer, ensuring they don't overlap. Note: Overlapping causes steaming, which leads to a limp texture.
- Air fry first phase. Cook for 4 minutes until the cheese begins to bubble and turn pale gold.
