Ingredients:

  • 1 cup creamy peanut butter, unsweetened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour
  • 12 mini Peanut Butter Cups, halved

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until smooth. Add the egg, vanilla, baking soda, and salt. Mix well. Gradually add the flour and stir until combined.
  3. Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
  4. Using a cookie scoop or tablespoon, take a portion of dough, flatten it in your palm, and place a halved Peanut Butter Cup in the center. Encapsulate the cup with dough and shape it into a ball.
  5. Place the shaped cookies on the prepared baking sheet and bake for 10-12 minutes until the edges are golden brown.
  6. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
