Ingredients:
- 1 cup creamy peanut butter, unsweetened
- ¾ cup granulated sugar
- ¾ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
- 12 mini Peanut Butter Cups, halved
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine peanut butter, granulated sugar, and brown sugar. Mix until smooth. Add the egg, vanilla, baking soda, and salt. Mix well. Gradually add the flour and stir until combined.
- Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
- Using a cookie scoop or tablespoon, take a portion of dough, flatten it in your palm, and place a halved Peanut Butter Cup in the center. Encapsulate the cup with dough and shape it into a ball.
- Place the shaped cookies on the prepared baking sheet and bake for 10-12 minutes until the edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
