Ingredients:

  • 2 lbs (900g) Yukon Gold potatoes, or other waxy potatoes, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried rosemary (optional)
  • Salt and freshly ground black pepper to taste
  • Optional garnish: Fresh parsley, chopped

Instructions:

  1. Wash and cube the potatoes into roughly 1-inch pieces. Ensure even sizes for even cooking.
  2. Place the cubed potatoes in a large bowl. Drizzle with olive oil, then sprinkle with garlic powder, onion powder, smoked paprika, rosemary (if using), salt, and pepper. Toss well to coat evenly.
  3. Preheat your air fryer to 400°F (200°C). Place the seasoned potatoes in the air fryer basket in a single layer (you may need to cook in batches to avoid overcrowding).
  4. Cook for 20-25 minutes, shaking the basket halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside. Check for doneness by piercing with a fork – it should slide in easily.
  5. Remove the air fryer roasted potatoes from the air fryer and transfer to a serving dish. Garnish with fresh parsley (if desired). Serve immediately and enjoy!
