Ingredients:
- 2 lbs (900g) Yukon Gold potatoes, or other waxy potatoes, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried rosemary (optional)
- Salt and freshly ground black pepper to taste
- Optional garnish: Fresh parsley, chopped
Instructions:
- Wash and cube the potatoes into roughly 1-inch pieces. Ensure even sizes for even cooking.
- Place the cubed potatoes in a large bowl. Drizzle with olive oil, then sprinkle with garlic powder, onion powder, smoked paprika, rosemary (if using), salt, and pepper. Toss well to coat evenly.
- Preheat your air fryer to 400°F (200°C). Place the seasoned potatoes in the air fryer basket in a single layer (you may need to cook in batches to avoid overcrowding).
- Cook for 20-25 minutes, shaking the basket halfway through, until the potatoes are golden brown and crispy on the outside and tender on the inside. Check for doneness by piercing with a fork – it should slide in easily.
- Remove the air fryer roasted potatoes from the air fryer and transfer to a serving dish. Garnish with fresh parsley (if desired). Serve immediately and enjoy!
