Ingredients:

  • 2 large sweet potatoes (about 1.5 lbs / 680g), peeled and cut into ½-inch thick fries
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon cornstarch (4g)
  • 1 teaspoon smoked paprika (3g)
  • ½ teaspoon garlic powder (1.5g)
  • ½ teaspoon onion powder (1.5g)
  • ½ teaspoon sea salt (3g)
  • ¼ teaspoon freshly ground black pepper (0.5g)

Instructions:

  1. Preheat oven to 400°F (200°C). Prepare baking sheet with parchment paper or a silicone mat.
  2. Peel and cut sweet potatoes into evenly sized fries.
  3. In the large bowl, toss the sweet potato fries with olive oil and cornstarch. Ensure fries are evenly coated.
  4. Add smoked paprika, garlic powder, onion powder, salt, and pepper to the bowl. Toss again to thoroughly coat.
  5. Spread the fries in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  6. Bake for 15 minutes, then flip the fries. Bake for another 10-15 minutes, or until golden brown and crispy, and easily pierced with a fork. Watch carefully toward the end to prevent burning.
  7. Let the fries cool slightly on the baking sheet before serving.
