Ingredients:

  • ¼ cup (60 ml) olive oil
  • 3 tablespoons (45 ml) soy sauce
  • 2 tablespoons (30 ml) balsamic vinegar
  • 1 tablespoon (15 g) brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 ½ pounds (680 g) flat iron steak
  • Fresh herbs for garnish (optional)

Instructions:

  1. In a mixing bowl, combine olive oil, soy sauce, balsamic vinegar, brown sugar, garlic, oregano, black pepper, and salt. Whisk until well combined.
  2. Place the flat iron steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak
  3. Seal/cover and refrigerate for 30 minutes.
  4. Preheat your grill to medium-high heat (about 400°F/200°C). If using a skillet, heat over medium-high heat until hot.
  5. Remove the steak from the marinade, letting excess drip off. Grill or sear the steak for 4-5 minutes on each side for medium-rare (internal temp of 130-135°F/54-57°C).
  6. Use tongs to flip the steak; avoid using a fork to prevent juices from escaping.
  7. Transfer the steak to a cutting board. Let it rest for 5-10 minutes before slicing to retain juices.
  8. Slice against the grain for maximum tenderness. Garnish with fresh herbs if desired and serve.
