Ingredients:
- 1 ½ cups (190 g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon (optional)
- ¼ teaspoon salt
- 2 ripe medium bananas (approximately 1 cup or 225 g mashed)
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) light brown sugar, packed
- 1 large egg, beaten
- ⅓ cup (75 g) unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- ¼ cup (60 ml) whole milk or buttermilk
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the loaf pan or line with parchment paper.
- In a large bowl, mash the bananas thoroughly until smooth with some small lumps remaining.
- Add melted butter, granulated sugar, brown sugar, beaten egg, vanilla extract, and milk to the mashed bananas. Whisk until combined and smooth.
- In a separate bowl, sift together flour, baking soda, baking powder, cinnamon (if using), and salt.
- Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix just until combined—do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes or until a toothpick inserted into the centre comes out clean or with a few moist crumbs.
- Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
