Ingredients:

  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon (optional)
  • ¼ teaspoon salt
  • 2 ripe medium bananas (approximately 1 cup or 225 g mashed)
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) light brown sugar, packed
  • 1 large egg, beaten
  • ⅓ cup (75 g) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • ¼ cup (60 ml) whole milk or buttermilk

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the loaf pan or line with parchment paper.
  2. In a large bowl, mash the bananas thoroughly until smooth with some small lumps remaining.
  3. Add melted butter, granulated sugar, brown sugar, beaten egg, vanilla extract, and milk to the mashed bananas. Whisk until combined and smooth.
  4. In a separate bowl, sift together flour, baking soda, baking powder, cinnamon (if using), and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix just until combined—do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes or until a toothpick inserted into the centre comes out clean or with a few moist crumbs.
  7. Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
