Ingredients:
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 2 tablespoons Worcestershire sauce
- 4 cloves garlic, minced
- 1 tablespoon brown sugar
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1 1/2 pounds beef skirt steak
- Salt, to taste
Instructions:
- In a bowl, whisk together olive oil, soy sauce, lime juice, Worcestershire sauce, minced garlic, brown sugar, cumin, smoked paprika, and black pepper.
- Place the skirt steak in the bowl. Ensure it's well coated. Cover and refrigerate for at least 30 minutes (up to overnight for maximum flavor).
- Preheat your grill or cast-iron skillet over medium-high heat until hot.
- Remove steak from marinade. Pat dry and sprinkle with salt. Grill or pan-sear for 3-4 minutes per side or until a nice crust forms and the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove steak and let it rest for 5-7 minutes, tented with foil.
- Slice against the grain into thin strips and enjoy!
