Ingredients:

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds beef skirt steak
  • Salt, to taste

Instructions:

  1. In a bowl, whisk together olive oil, soy sauce, lime juice, Worcestershire sauce, minced garlic, brown sugar, cumin, smoked paprika, and black pepper.
  2. Place the skirt steak in the bowl. Ensure it's well coated. Cover and refrigerate for at least 30 minutes (up to overnight for maximum flavor).
  3. Preheat your grill or cast-iron skillet over medium-high heat until hot.
  4. Remove steak from marinade. Pat dry and sprinkle with salt. Grill or pan-sear for 3-4 minutes per side or until a nice crust forms and the internal temperature reaches 130°F (54°C) for medium-rare.
  5. Remove steak and let it rest for 5-7 minutes, tented with foil.
  6. Slice against the grain into thin strips and enjoy!
