  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 cup granulated sugar

  • 1/4 cup unsalted butter, melted
  • 1/4 cup chopped nuts (optional, e.g., walnuts or pecans)
  • 1/4 cup raisins or dried cranberries (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easier removal.
  2. In a medium bowl, mix the persimmon puree, granulated sugar, brown sugar, egg, vanilla extract, cinnamon, baking soda, and salt. Stir well until combined and smooth.
  3. In another bowl, combine the rolled oats, flour, baking powder, granulated sugar, and salt. Mix in the melted butter until the mixture resembles coarse crumbs.
  4. Spread the persimmon mixture evenly into the prepared baking pan. Sprinkle the oatmeal topping over the persimmon layer, ensuring even coverage. If using, sprinkle chopped nuts and dried fruit over the top for added texture and flavor.
  5. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Allow the bars to cool in the pan for 10 minutes, then lift them out using the parchment paper (if used). Transfer to a wire rack to cool completely before cutting into squares.
