Ingredients:

  • 1 box (15.25 oz / 432 g) yellow cake mix
  • 1 cup (240 ml) water
  • 1/2 cup (120 ml) vegetable oil
  • 3 large eggs
  • 1 can (20 oz / 567 g) crushed pineapple in juice, drained
  • 1/2 cup (100 g) brown sugar
  • 1/3 cup (75 g) unsalted butter, melted
  • 1 teaspoon (5 ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Grease the baking pan with non-stick spray or butter.
  3. Combine cake mix, water, vegetable oil, and eggs in a mixing bowl. Mix on low speed for 1 minute, then on medium for 2 minutes.
  4. In a separate bowl, mix the drained pineapple, brown sugar, melted butter, and vanilla extract until combined.
  5. Pour the cake batter into the prepared baking pan.
  6. Spread the pineapple mixture evenly on top of the batter.
  7. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
  9. Serve warm or at room temperature, optionally with whipped cream or ice cream.
