Ingredients:
- 1 box (15.25 oz / 432 g) yellow cake mix
- 1 cup (240 ml) water
- 1/2 cup (120 ml) vegetable oil
- 3 large eggs
- 1 can (20 oz / 567 g) crushed pineapple in juice, drained
- 1/2 cup (100 g) brown sugar
- 1/3 cup (75 g) unsalted butter, melted
- 1 teaspoon (5 ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C).
- Grease the baking pan with non-stick spray or butter.
- Combine cake mix, water, vegetable oil, and eggs in a mixing bowl. Mix on low speed for 1 minute, then on medium for 2 minutes.
- In a separate bowl, mix the drained pineapple, brown sugar, melted butter, and vanilla extract until combined.
- Pour the cake batter into the prepared baking pan.
- Spread the pineapple mixture evenly on top of the batter.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
- Serve warm or at room temperature, optionally with whipped cream or ice cream.
