Ingredients:

  • 1 cup (100g) almond flour
  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • 1/2 cup (120ml) freshly squeezed orange juice
  • 1/2 cup (90g) dark chocolate chips (optional)
  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons fresh orange juice
  • Zest of 1 orange (for garnish)
  • Optional: sliced almonds for topping

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy release.
  2. In a medium bowl, whisk together the almond flour, all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and orange zest.
  5. Gradually add the dry ingredient mixture to the wet mixture, alternating with the freshly squeezed orange juice. Start and end with the dry ingredients. Mix until just combined. If desired, fold in the dark chocolate chips.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  8. Whisk together the powdered sugar and enough fresh orange juice to create a smooth, pourable glaze. Adjust the consistency with more juice or powdered sugar as necessary.
  9. Once the cake has cooled completely, drizzle the glaze over the top, allowing it to drip down the sides. Garnish with orange zest and optional sliced almonds.
  10. Slice the cake into wedges, serve, and enjoy!
