Ingredients:

  • 4 oz (115g) Blue Cheese, crumbled
  • ½ cup (120ml) Sour Cream
  • ½ cup (120ml) Mayonnaise
  • 2 tablespoons (30ml) Milk
  • 1 tablespoon (15ml) Lemon Juice
  • 1 clove Garlic, minced
  • ¼ teaspoon Black Pepper
  • 1 tablespoon fresh Parsley, chopped (optional)

Instructions:

  1. In the mixing bowl, crumble the blue cheese using your fingers. Leave some chunks for texture.
  2. Add the sour cream and mayonnaise to the bowl.
  3. Whisk until the mixture is mostly smooth, but still has some small chunks of cheese.
  4. Gradually add the milk, a tablespoon at a time, whisking until you reach your desired consistency.
  5. Stir in the lemon juice, minced garlic, and black pepper.
  6. Taste the blue cheese dip and adjust seasonings as needed.
  7. Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavours to meld.
  8. Before serving, garnish with chopped fresh parsley, if desired.
