Ingredients:

  • 1.5 lbs large shrimp, peeled and deveined
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp avocado oil
  • 1/3 cup raw honey
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 tsp sriracha
  • 1 tbsp fresh lemon juice
  • 2 green onions, thinly sliced
  • 1 tsp toasted sesame seeds

Instructions:

  1. Pat the shrimp between double layers of paper towels until they are bone-dry to the touch to ensure a proper sear. Season immediately with salt and pepper.
  2. In a small bowl, whisk together the honey, soy sauce, garlic, ginger, lemon juice, and sriracha until the honey is fully emulsified.
  3. Heat avocado oil in a large cast-iron or stainless steel skillet over medium-high heat until shimmering.
  4. Add shrimp to the pan in a single layer, working in batches if necessary. Sear for 2 minutes per side until opaque and a slight golden char develops. Remove shrimp from the pan and set aside.
