Ingredients:

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) unsweetened almond milk
  • 1 cup (240ml) water
  • 1/4 tsp (1.5g) fine sea salt
  • 1/2 cup (120g) liquid egg whites
  • 2 scoops (60g) vanilla protein powder
  • 1 tbsp (10g) chia seeds
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (20g) maple syrup

Instructions:

  1. Combine the rolled oats, almond milk, water, and salt in a small saucepan. Bring to a gentle boil over medium-high heat, then reduce to a simmer. Stir occasionally for 5-7 minutes until the liquid is mostly absorbed and the oats are tender.
  2. Reduce heat to low. Slowly whisk in the liquid egg whites and chia seeds. Stir constantly for 2 minutes until the oats become thicker and more velvety.
  3. Remove the pan from the heat. Stir in the vanilla extract, cinnamon, and protein powder. Fold in the maple syrup until well combined.
