Ingredients:

  • 1 round of Brie cheese (about 8 ounces or 225 grams)
  • 1/2 cup canned pumpkin puree (120 grams)
  • 1 teaspoon pumpkin spice blend (5 grams)
  • 1 tablespoon maple syrup (15 mL)
  • 1 cup walnuts, finely chopped (100 grams)
  • 1/2 cup panko breadcrumbs (50 grams)
  • 2 tablespoons unsalted butter, melted (28 grams)
  • 1 teaspoon fresh thyme, minced (optional)
  • Pinch of salt
  • Sliced baguette, crackers, or apple slices for serving

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Place the Brie cheese in a baking dish.
  3. In a small bowl, combine pumpkin puree, pumpkin spice, and maple syrup. Spread this mixture on top of the Brie.
  4. In a bowl, combine finely chopped walnuts, panko breadcrumbs, melted butter, thyme, and salt. Mix until well combined.
  5. Gently press the walnut mixture over the pumpkin layer on the Brie.
  6. Place in the oven and bake for 20-25 minutes, until the Brie is soft and the walnut crust is golden brown.
  7. Allow to cool for a few minutes before serving warm with sliced baguette, crackers, or apple slices.
