Ingredients:

  • 1 cup (200g) Fresh Raspberries
  • 1 cup (200g) Granulated Sugar
  • 1 cup (240ml) Water
  • 4 sprigs Fresh Thyme
  • 2 oz (60ml) Gin (London Dry or something botanical)
  • 1 oz (30ml) Fresh Lemon Juice
  • 1 oz (30ml) Raspberry Thyme Syrup
  • 1 Egg White (optional)
  • 3-4 oz (90-120ml) Chilled Club Soda or Sparkling Water
  • Raspberries and Thyme sprig, for garnish

Instructions:

  1. Combine raspberries, sugar, water, and thyme in a saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves.
  2. Simmer for 5-7 minutes, until slightly thickened. Remove from heat and let cool slightly. Strain through a fine-mesh strainer, discarding solids.
  3. Refrigerate the syrup for at least 30 minutes, or until cold.
  4. In a cocktail shaker, combine gin, lemon juice, raspberry thyme syrup, and egg white (if using).
  5. Close the shaker tightly and dry shake (without ice) for 15 seconds. This emulsifies the egg white for a foamy texture.
  6. Add ice to the shaker and shake vigorously for another 15 seconds, until well-chilled.
  7. Strain the mixture into a tall glass filled with ice.
  8. Top with chilled club soda or sparkling water.
  9. Garnish with fresh raspberries and a thyme sprig.
