Ingredients:

  • 1 lb ground venison
  • 1/2 lb ground pork
  • 1/4 cup plain bread crumbs
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 4 brioche or sesame seed buns
  • 4 slices pepper jack or sharp cheddar cheese
  • 1 large tomato, sliced
  • 1 red onion, thinly sliced
  • 4 leaves butter lettuce

Instructions:

  1. In a large bowl, combine the ground venison, ground pork, bread crumbs, egg, Worcestershire sauce, and seasonings. Mix gently by hand until just incorporated; do not overwork the meat.
  2. Divide the mixture into 4 equal portions. Shape each into a patty about 3/4 inch thick and press a slight indentation into the center of each patty.
  3. Heat a skillet or grill to medium-high. Sear patties for 4–5 minutes per side until a deep mahogany crust forms.
  4. During the final minute of cooking, place a slice of cheese on each patty and cover with a lid for 30 seconds to melt.
  5. Toast the buns until golden. Layer with lettuce, the patty, tomato, and onion, then serve immediately.
