Ingredients:
- 4 cups watermelon, cubed (approximately 1 medium watermelon)
- 1 cup feta cheese, crumbled (about 150g)
- 1/2 cup fresh mint leaves, torn
- 1/4 cup red onion, thinly sliced (optional)
- 2 tablespoons extra-virgin olive oil (30ml)
- 1 tablespoon balsamic vinegar (15ml)
- Salt and pepper to taste
Instructions:
- Cut the watermelon into small, bite-sized cubes.
- In a large mixing bowl, combine cubed watermelon, crumbled feta, torn mint leaves, and sliced red onion (if using).
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until emulsified.
- Drizzle dressing over the salad and gently toss until everything is evenly coated.
- Transfer to a serving platter or bowl and garnish with additional mint leaves if desired.
