Ingredients:

  • 4 cups watermelon, cubed (approximately 1 medium watermelon)
  • 1 cup feta cheese, crumbled (about 150g)
  • 1/2 cup fresh mint leaves, torn
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons extra-virgin olive oil (30ml)
  • 1 tablespoon balsamic vinegar (15ml)
  • Salt and pepper to taste

Instructions:

  1. Cut the watermelon into small, bite-sized cubes.
  2. In a large mixing bowl, combine cubed watermelon, crumbled feta, torn mint leaves, and sliced red onion (if using).
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until emulsified.
  4. Drizzle dressing over the salad and gently toss until everything is evenly coated.
  5. Transfer to a serving platter or bowl and garnish with additional mint leaves if desired.
