Ingredients:
- 2 cups Ripe Mango Flesh (cubed, 300g)
- 2 cups Whole Milk Plain Yogurt (full-fat, chilled, 480 ml)
- 1/2 cup Cold Milk (Whole or 2%, 120 ml)
- 1/4 cup Granulated Sugar or Honey (to taste)
- 1/2 teaspoon Freshly Ground Green Cardamom
- Pinch of Saffron Threads (optional)
- 1 Tbsp Finely Chopped Pistachios (unsalted, for garnish)
- 4 sprigs Fresh Mint Leaves (for garnish)
Instructions:
- Preparation: Carefully peel the skin from the mangoes and chop the flesh into rough 1-inch cubes. Ensure all liquid ingredients (yogurt and milk) are thoroughly chilled.
- Load the Blender: Place the cubed mango flesh, the whole milk plain yogurt, the sugar or honey, and the freshly ground cardamom into the blender jug.
- Initial Blend: Secure the lid and blend on medium speed until the mixture is completely smooth (about 30–45 seconds). Stop and scrape down the sides if necessary.
- Check Consistency: Add the cold milk incrementally, blending for 5–10 seconds after each addition, until the Lassi reaches your desired thickness. It should pour easily but still coat the back of a spoon.
- Taste and Adjust: Taste the Lassi. Adjust the sweetness level if necessary, or add a tablespoon of fresh lime or lemon juice for balance if the mango is too sweet.
- Chill: For best results, pour the prepared Lassi into an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld beautifully.
- Serve: Pour the chilled Lassi into serving glasses. Garnish generously with chopped pistachios, a few strands of saffron (if using), and a sprig of fresh mint. Serve immediately.
