Ingredients:

  • 1 (6 ounce/170g) package orange-flavored gelatin dessert (Jell-O), sugar-free optional
  • 2 cups (475ml) boiling water
  • 1 cup (235ml) cold water
  • 1 (20 ounce/567g) can crushed pineapple, undrained
  • 1 cup (110g) shredded carrots, finely shredded
  • 1 cup (57g) miniature marshmallows (or Dandies vegan marshmallows)
  • ½ cup (60g) chopped pecans or walnuts (optional)

Instructions:

  1. In a large bowl, dissolve the orange gelatin in the boiling water. Stir until completely dissolved, about 2 minutes.
  2. Stir in the cold water. Add the undrained crushed pineapple, shredded carrots, marshmallows, and nuts (if using). Mix well.
  3. Pour the mixture into your chosen Jello mold or bowl.
  4. Cover with cling film and refrigerate for at least 4 hours, or preferably overnight, until firm.
  5. Dip the mold briefly in warm water. Invert onto a serving plate. Give it a gentle shake.
  6. Slice and serve chilled.
