Ingredients:
- 1 (6 ounce/170g) package orange-flavored gelatin dessert (Jell-O), sugar-free optional
- 2 cups (475ml) boiling water
- 1 cup (235ml) cold water
- 1 (20 ounce/567g) can crushed pineapple, undrained
- 1 cup (110g) shredded carrots, finely shredded
- 1 cup (57g) miniature marshmallows (or Dandies vegan marshmallows)
- ½ cup (60g) chopped pecans or walnuts (optional)
Instructions:
- In a large bowl, dissolve the orange gelatin in the boiling water. Stir until completely dissolved, about 2 minutes.
- Stir in the cold water. Add the undrained crushed pineapple, shredded carrots, marshmallows, and nuts (if using). Mix well.
- Pour the mixture into your chosen Jello mold or bowl.
- Cover with cling film and refrigerate for at least 4 hours, or preferably overnight, until firm.
- Dip the mold briefly in warm water. Invert onto a serving plate. Give it a gentle shake.
- Slice and serve chilled.
