Ingredients:
- 3 cups Whole Milk (Full fat preferred)
- 1 cup Heavy Cream (for base)
- 4 oz Dark Chocolate, 70% Cacao, finely chopped or grated
- 3 Tbsp Dutch-Processed Cocoa Powder, unsweetened
- 2-3 Tbsp Granulated Sugar (adjust to taste)
- 1 tsp Pure Vanilla Extract (for base)
- Pinch Sea Salt
- 1 cup Cold Heavy Cream (for topping)
- 1 Tbsp Powdered Sugar
- 1/2 tsp Pure Vanilla Extract (for topping)
- 12-16 Large Marshmallows
- Cocoa Powder or Chocolate Shavings (for garnish)
Instructions:
- Chill Equipment: Ensure your mixing bowl and whisk attachment are thoroughly chilled (pop them in the freezer for 10 minutes beforehand).
- Whip the Cream: Pour the cold heavy cream (for topping) into the chilled bowl. Begin whisking on medium-low speed until soft peaks start to form.
- Sweeten and Finish: Gradually add the powdered sugar and vanilla extract. Increase speed and whisk until you achieve firm, yet still soft, peaks. Place the whipped cream immediately into the refrigerator.
- Combine Liquids: Pour the whole milk and the 1 cup of heavy cream (for base) into a heavy-bottomed saucepan. Heat gently over medium-low heat until steam begins to rise (do not allow it to boil).
- Add Dry Ingredients: Once warm, remove the pan from the heat briefly. Whisk in the Dutch-processed cocoa powder, granulated sugar, and pinch of salt until absolutely smooth and no lumps remain.
- Return to Heat: Place the pan back on low heat. Continue to whisk constantly for 3–5 minutes until the mixture is hot and has started to slightly thicken.
- Incorporate Chocolate: Remove the pan completely from the heat. Add the finely chopped dark chocolate. Let it sit for 1 minute to melt slightly, then whisk vigorously until the chocolate is fully emulsified, creating a thick, glossy, homogeneous liquid.
- Finish the Base: Stir in the remaining vanilla extract (for the base). Taste and adjust sweetness if necessary.
- Assembly: Carefully pour the hot chocolate into four mugs. Spoon a generous dollop of the chilled whipped cream onto the surface.
- Garnish and Serve: Pile on the marshmallows. Garnish with a touch of cocoa powder or chocolate shavings, and enjoy immediately.
