Ingredients:
- 1 ½ pounds broccoli florets (approx. 700g), fresh, cut into bite-sized pieces
- 2 tablespoons olive oil (30 ml)
- 2 cloves garlic, minced (about 2 teaspoons)
- ½ teaspoon salt (2.5 ml)
- ¼ teaspoon black pepper (1.25 ml)
- 1 tablespoon lemon juice (15 ml), fresh (optional, but highly recommended)
- Red pepper flakes, to taste (optional, for a little kick)
- Parmesan cheese, grated, to taste (optional, for cheesy goodness)
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and dry the broccoli florets. Cut into even-sized pieces for even cooking.
- In a large bowl, toss broccoli with olive oil, minced garlic, salt, and pepper. Ensure the broccoli is evenly coated.
- Spread the broccoli in a single layer on the baking sheet (lined with parchment paper, if desired). Avoid overcrowding to ensure crispiness.
- Roast in the preheated oven for 20-25 minutes, or until the broccoli is tender-crisp and lightly browned. Toss halfway through for even cooking.
- Remove from oven. Drizzle with lemon juice (if using). Sprinkle with red pepper flakes or grated parmesan (if using). Serve immediately.
