Ingredients:

  • 1 ½ pounds broccoli florets (approx. 700g), fresh, cut into bite-sized pieces
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced (about 2 teaspoons)
  • ½ teaspoon salt (2.5 ml)
  • ¼ teaspoon black pepper (1.25 ml)
  • 1 tablespoon lemon juice (15 ml), fresh (optional, but highly recommended)
  • Red pepper flakes, to taste (optional, for a little kick)
  • Parmesan cheese, grated, to taste (optional, for cheesy goodness)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the broccoli florets. Cut into even-sized pieces for even cooking.
  3. In a large bowl, toss broccoli with olive oil, minced garlic, salt, and pepper. Ensure the broccoli is evenly coated.
  4. Spread the broccoli in a single layer on the baking sheet (lined with parchment paper, if desired). Avoid overcrowding to ensure crispiness.
  5. Roast in the preheated oven for 20-25 minutes, or until the broccoli is tender-crisp and lightly browned. Toss halfway through for even cooking.
  6. Remove from oven. Drizzle with lemon juice (if using). Sprinkle with red pepper flakes or grated parmesan (if using). Serve immediately.
