Ingredients:
- 2 medium zucchinis, sliced into ½-inch rounds (about 300g)
- 2 bell peppers (red or yellow), sliced (about 300g)
- 3 tablespoons olive oil (45ml)
- 4 cloves garlic, minced
- ½ teaspoon red chili flakes (or to taste)
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
- Lemon wedges (optional)
Instructions:
- Preheat your oven to 425°F (220°C).
- Prepare the vegetables: Wash and slice the zucchinis and bell peppers. Mince the garlic.
- In a mixing bowl, combine the sliced zucchini and peppers. Add olive oil, garlic, chili flakes, smoked paprika, salt, and pepper. Toss to coat evenly.
- Spread the vegetable mixture onto a baking sheet in a single layer.
- Place in the oven and roast for 20-25 minutes, stirring halfway, until they are golden and tender.
- Remove from the oven, sprinkle with fresh parsley, and serve with lemon wedges on the side.
