Ingredients:

  • 2 medium zucchinis, sliced into ½-inch rounds (about 300g)
  • 2 bell peppers (red or yellow), sliced (about 300g)
  • 3 tablespoons olive oil (45ml)
  • 4 cloves garlic, minced
  • ½ teaspoon red chili flakes (or to taste)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)
  • Lemon wedges (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the vegetables: Wash and slice the zucchinis and bell peppers. Mince the garlic.
  3. In a mixing bowl, combine the sliced zucchini and peppers. Add olive oil, garlic, chili flakes, smoked paprika, salt, and pepper. Toss to coat evenly.
  4. Spread the vegetable mixture onto a baking sheet in a single layer.
  5. Place in the oven and roast for 20-25 minutes, stirring halfway, until they are golden and tender.
  6. Remove from the oven, sprinkle with fresh parsley, and serve with lemon wedges on the side.
