Ingredients:

  • 2 medium acorn squashes (about 1 pound each / 454 grams each)
  • 4 tablespoons unsalted butter (60 grams)
  • 3 tablespoons pure maple syrup (45 ml)
  • 1 teaspoon ground cinnamon (2 grams)
  • ½ teaspoon nutmeg (1 gram)
  • ½ teaspoon salt (3 grams)
  • Pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut each acorn squash in half vertically and scoop out the seeds and stringy bits with a spoon.
  3. In a mixing bowl, melt the butter in the microwave until liquid. Add maple syrup, ground cinnamon, nutmeg, salt, and pepper; stir until combined.
  4. Place squash halves cut-side up on the baking sheet and pour or brush the maple butter glaze evenly over each half.
  5. Roast in the preheated oven for about 40 minutes, or until the squash is tender (test with a fork).
  6. Let cool slightly, then serve warm, drizzling any remaining glaze over the tops.
