Ingredients:
- 2 medium acorn squashes (about 1 pound each / 454 grams each)
- 4 tablespoons unsalted butter (60 grams)
- 3 tablespoons pure maple syrup (45 ml)
- 1 teaspoon ground cinnamon (2 grams)
- ½ teaspoon nutmeg (1 gram)
- ½ teaspoon salt (3 grams)
- Pepper, to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Cut each acorn squash in half vertically and scoop out the seeds and stringy bits with a spoon.
- In a mixing bowl, melt the butter in the microwave until liquid. Add maple syrup, ground cinnamon, nutmeg, salt, and pepper; stir until combined.
- Place squash halves cut-side up on the baking sheet and pour or brush the maple butter glaze evenly over each half.
- Roast in the preheated oven for about 40 minutes, or until the squash is tender (test with a fork).
- Let cool slightly, then serve warm, drizzling any remaining glaze over the tops.
