Ingredients:

  • 1 1/4 cups (150g) all-purpose flour, plus more for dusting
  • 1/2 teaspoon (3g) salt
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1/4 cup (60ml) ice water
  • 6 fresh figs, such as Brown Turkey or Black Mission, quartered
  • 1 tablespoon (15ml) olive oil
  • 1/4 teaspoon (1.5g) salt
  • 1/4 teaspoon (1.5g) black pepper
  • 1 teaspoon fresh thyme leaves, chopped
  • 4 ounces (115g) Gorgonzola cheese, crumbled
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons (30ml) balsamic vinegar
  • 1 tablespoon (15ml) honey

Instructions:

  1. Prepare the Tart Shells: Make tart shells from scratch or thaw store-bought shells.
  2. Preheat Oven and Prepare Figs: Preheat oven to 400°F (200°C). Toss figs with olive oil, salt, pepper, and thyme.
  3. Roast the Figs: Arrange figs on a baking sheet lined with parchment paper and roast until softened and slightly caramelized.
  4. Assemble the Tartlets: Place tart shells on a baking sheet. Fill each shell with roasted figs and top with crumbled Gorgonzola.
  5. Brush with Egg Wash: Brush the edges of each tartlet with egg wash.
  6. Bake the Tartlets: Bake in preheated oven until the pastry is golden brown and the cheese is melted and bubbly.
  7. Prepare the Honey-Balsamic Glaze: While the tartlets are baking, combine balsamic vinegar and honey in a small saucepan. Simmer over low heat until slightly thickened.
  8. Drizzle and Serve: Remove tartlets from oven and let cool slightly. Drizzle with honey-balsamic glaze and serve warm.
