Ingredients:
- 1 head of garlic
- 2 tablespoons olive oil
- 1 cup (2 sticks) unsalted butter, softened
- 2 tablespoons finely chopped fresh parsley
- 1 tablespoon finely chopped fresh chives
- 1 teaspoon finely chopped fresh rosemary
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 400°F (200°C). Cut the top off the garlic head, exposing the cloves. Drizzle with olive oil and wrap in aluminum foil.
- Bake until cloves are soft and golden brown (45 mins - 1 hour). Let cool slightly.
- Squeeze the roasted garlic cloves from their skins into the mixing bowl. Mash the garlic with a fork until smooth.
- Add the softened butter, parsley, chives, rosemary, salt, and pepper to the bowl.
- Use a fork or electric mixer to combine all ingredients until well blended and creamy.
- Place the butter mixture onto a sheet of parchment paper or plastic wrap. Shape into a log or any desired form. Wrap tightly and refrigerate until firm.
- Slice the butter and serve on your favourite dishes.
