Ingredients:

  • 50 pieces Mini Pretzel Twists (approx. 2 oz)
  • 25 pieces Rolo Chewy Caramels in Milk Chocolate (unwrapped)
  • 1/4 cup Semi-sweet or Dark Chocolate Chips (Optional Drizzle)
  • 1/4 tsp Coarse Sea Salt Flakes (Optional Finish)

Instructions:

  1. Preheat the oven to a very low temperature (175°F / 80°C). Line a standard baking sheet with parchment paper, which is essential for preventing the caramel from sticking.
  2. Lay 25 of the mini pretzel twists flat on the prepared baking sheet, ensuring they are evenly spaced.
  3. Place one unwrapped Rolo directly in the centre of each pretzel twist.
  4. Transfer the baking sheet to the preheated oven. Bake for 3 to 4 minutes. The Rolos should look glossy and soft, but they should retain their basic shape and not be fully melted.
  5. Immediately remove the tray from the oven. Take the remaining 25 pretzels and gently press one firmly onto the soft Rolo on the tray. Apply pressure until the Rolo flattens slightly, forming a neat “sandwich” seal.
  6. Optional Drizzle: If using, melt the chocolate chips in a small microwave-safe bowl. Drizzle the melted chocolate sparingly over the finished bites. Sprinkle a tiny pinch of sea salt flakes over the melted chocolate while it is still wet.
  7. Allow the pretzel bites to cool and set completely at room temperature for about 15 minutes, or speed up the process by chilling in the refrigerator for 10 minutes. The caramel must be firm before serving.
