Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound Italian sausage (sweet or hot), casings removed (450g)
- 1 large yellow onion, sliced (approx. 200g)
- 2 bell peppers (any color), seeded and sliced (approx. 300g)
- 2 cloves garlic, minced (approx. 6g)
- 1 (14.5 ounce) can crushed tomatoes (411g)
- 1 teaspoon dried oregano (5 ml)
- 1/2 teaspoon dried basil (2.5 ml)
- Salt and freshly ground black pepper, to taste
- Optional: 1/4 cup chopped fresh parsley, for garnish (approx. 10g)
- Optional: Red pepper flakes, to taste
Instructions:
- Heat the olive oil in a large skillet over medium heat. Crumble the sausage into the skillet and cook, breaking it up with a spatula, until browned. Drain off any excess grease.
- Add the sliced onion and bell peppers to the skillet with the sausage. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.
- Add the minced garlic and cook for another minute, until fragrant. Be careful not to burn the garlic!
- Stir in the crushed tomatoes, dried oregano, and dried basil. Season with salt and pepper to taste. Bring to a simmer, reduce heat to low, and cover. Cook for 15 minutes, stirring occasionally, allowing the flavors to meld.
- Stir in the chopped fresh parsley (if using). Serve hot on rolls, with pasta, or as desired.
