Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound Italian sausage (sweet or hot), casings removed (450g)
  • 1 large yellow onion, sliced (approx. 200g)
  • 2 bell peppers (any color), seeded and sliced (approx. 300g)
  • 2 cloves garlic, minced (approx. 6g)
  • 1 (14.5 ounce) can crushed tomatoes (411g)
  • 1 teaspoon dried oregano (5 ml)
  • 1/2 teaspoon dried basil (2.5 ml)
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup chopped fresh parsley, for garnish (approx. 10g)
  • Optional: Red pepper flakes, to taste

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Crumble the sausage into the skillet and cook, breaking it up with a spatula, until browned. Drain off any excess grease.
  2. Add the sliced onion and bell peppers to the skillet with the sausage. Cook, stirring occasionally, until the vegetables are softened, about 8-10 minutes.
  3. Add the minced garlic and cook for another minute, until fragrant. Be careful not to burn the garlic!
  4. Stir in the crushed tomatoes, dried oregano, and dried basil. Season with salt and pepper to taste. Bring to a simmer, reduce heat to low, and cover. Cook for 15 minutes, stirring occasionally, allowing the flavors to meld.
  5. Stir in the chopped fresh parsley (if using). Serve hot on rolls, with pasta, or as desired.
