Ingredients:
- 1 tbsp (15ml) Olive Oil
- 1.5 lbs (680g) Italian Sausage (sweet or hot, or a mix), casings removed
- 1 Large Yellow Onion, thinly sliced
- 1 Large Red Bell Pepper, thinly sliced
- 1 Large Green Bell Pepper, thinly sliced
- 2 cloves Garlic, minced
- 1 tsp (5ml) Dried Oregano
- ½ tsp (2.5ml) Dried Basil
- ½ tsp (2.5ml) Red Pepper Flakes (optional, for heat)
- 1/2 tsp (2.5 ml) salt
- 1/4 tsp (1.25 ml) black pepper
- 1 (28 ounce/794g) can Crushed Tomatoes
- 1/4 cup (60ml) Dry Red Wine (optional)
- Fresh Parsley, chopped (for garnish)
- 6 Hoagie Rolls (Italian rolls, optional)
- Grated Parmesan Cheese (optional)
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add sausage (removed from casings) and cook, breaking it up with a spoon, until browned on all sides and cooked through. Remove sausage and set aside.
- Add sliced onions to the same skillet and cook over medium heat, stirring occasionally, until softened and deeply caramelized (about 20-25 minutes).
- Add sliced bell peppers to the onions and cook until softened, about 5-7 minutes.
- Add minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper to the skillet. Cook for 1 minute until fragrant.
- Pour in crushed tomatoes and red wine (if using). Bring to a simmer, then reduce heat to low.
- Return the cooked sausage to the skillet. Stir to combine. Cover and simmer for at least 15 minutes to allow the flavors to meld, or up to 30 minutes for a richer flavor.
- Serve hot on hoagie rolls, topped with Parmesan cheese (if desired). Garnish with fresh parsley.
