Ingredients:

  • 1 tbsp (15ml) Olive Oil
  • 1.5 lbs (680g) Italian Sausage (sweet or hot, or a mix), casings removed
  • 1 Large Yellow Onion, thinly sliced
  • 1 Large Red Bell Pepper, thinly sliced
  • 1 Large Green Bell Pepper, thinly sliced
  • 2 cloves Garlic, minced
  • 1 tsp (5ml) Dried Oregano
  • ½ tsp (2.5ml) Dried Basil
  • ½ tsp (2.5ml) Red Pepper Flakes (optional, for heat)
  • 1/2 tsp (2.5 ml) salt
  • 1/4 tsp (1.25 ml) black pepper
  • 1 (28 ounce/794g) can Crushed Tomatoes
  • 1/4 cup (60ml) Dry Red Wine (optional)
  • Fresh Parsley, chopped (for garnish)
  • 6 Hoagie Rolls (Italian rolls, optional)
  • Grated Parmesan Cheese (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage (removed from casings) and cook, breaking it up with a spoon, until browned on all sides and cooked through. Remove sausage and set aside.
  2. Add sliced onions to the same skillet and cook over medium heat, stirring occasionally, until softened and deeply caramelized (about 20-25 minutes).
  3. Add sliced bell peppers to the onions and cook until softened, about 5-7 minutes.
  4. Add minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper to the skillet. Cook for 1 minute until fragrant.
  5. Pour in crushed tomatoes and red wine (if using). Bring to a simmer, then reduce heat to low.
  6. Return the cooked sausage to the skillet. Stir to combine. Cover and simmer for at least 15 minutes to allow the flavors to meld, or up to 30 minutes for a richer flavor.
  7. Serve hot on hoagie rolls, topped with Parmesan cheese (if desired). Garnish with fresh parsley.
