Ingredients:

  • 1 pound fresh okra, trimmed and sliced
  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon ground turmeric
  • 1 can coconut milk
  • 1 tablespoon lime juice
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Optional: Red chili flakes or fresh chili for heat

Instructions:

  1. Trim the ends and slice the okra into 1/2-inch pieces.
  2. In a large skillet over medium heat, add vegetable oil and sauté chopped onion until softened, about 3-4 minutes.
  3. Stir in minced garlic and ginger; cook for an additional minute until fragrant.
  4. Add sliced okra to the skillet; sauté for 5-7 minutes until tender, stirring occasionally.
  5. Sprinkle turmeric over the sautéed okra; mix well, then pour in coconut milk and lime juice, stirring until combined.
  6. Allow the mixture to simmer for 5-10 minutes until the sauce thickens slightly.
  7. Taste and adjust seasoning with salt and optional heat.
  8. Remove from heat, garnish with fresh cilantro, and serve hot.
