Ingredients:
- 1 pound fresh okra, trimmed and sliced
- 1 tablespoon vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 teaspoon ground turmeric
- 1 can coconut milk
- 1 tablespoon lime juice
- Salt, to taste
- Fresh cilantro, for garnish
- Optional: Red chili flakes or fresh chili for heat
Instructions:
- Trim the ends and slice the okra into 1/2-inch pieces.
- In a large skillet over medium heat, add vegetable oil and sauté chopped onion until softened, about 3-4 minutes.
- Stir in minced garlic and ginger; cook for an additional minute until fragrant.
- Add sliced okra to the skillet; sauté for 5-7 minutes until tender, stirring occasionally.
- Sprinkle turmeric over the sautéed okra; mix well, then pour in coconut milk and lime juice, stirring until combined.
- Allow the mixture to simmer for 5-10 minutes until the sauce thickens slightly.
- Taste and adjust seasoning with salt and optional heat.
- Remove from heat, garnish with fresh cilantro, and serve hot.
