Ingredients:
- 2 cups dried navy beans, soaked overnight
- 4 cups water
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 small onion, diced
- 2 strips of bacon, chopped (optional)
Instructions:
- Rinse and soak the dried beans overnight in cold water. Drain and rinse the beans in the morning.
- In a large pot, combine soaked beans and 4 cups of water. Bring to a boil, then reduce to a simmer, covering partially. Cook until beans are tender, about 45 minutes to 1 hour.
- In a mixing bowl, whisk together ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, and black pepper.
- Preheat the oven to 350°F (175°C). In the pot with the cooked beans, stir in the sauce and diced onion (and bacon if using). Transfer to a baking dish and cover with foil.
- Bake in the preheated oven for 30-40 minutes, or until the sauce is bubbly and thickened.
- Remove from the oven, allow to cool slightly, and serve warm.
