Ingredients:
- 1 pound ground beef (preferably 80/20)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning
- 1 cup canned diced tomatoes, drained
- 1 cup black beans, rinsed and drained
- 6 cups tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro (optional)
- Sliced jalapeños (optional)
- Diced avocado (optional)
- Chopped green onions (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Add diced onions and cook until softened. Stir in minced garlic and taco seasoning; cook for 1 minute until fragrant. Mix in the drained tomatoes and black beans; stir until combined.
- In the baking dish, create a layer of tortilla chips covering the bottom. Spoon half of the beef mixture over the chips. Sprinkle half of the shredded cheese on top. Repeat the layers with the remaining chips, beef mixture, and cheese.
- Pour sour cream and salsa evenly over the top. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from oven and let it cool slightly. Top with fresh cilantro and desired toppings before serving.
