Ingredients:

  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 4 cups broccoli florets
  • 3 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth or water
  • 1 teaspoon grated ginger (optional)
  • Salt and pepper, to taste

Instructions:

  1. Slice the chicken breast into thin strips and season with salt, pepper, and cornstarch in a mixing bowl.
  2. In a small bowl, whisk together soy sauce, oyster sauce (if using), chicken broth, and grated ginger until well combined.
  3. Heat 1 tablespoon of oil in the skillet over medium-high heat, add the chicken, and cook until browned and cooked through.
  4. Remove the chicken from the skillet and set aside. Add another tablespoon of oil, then add minced garlic, broccoli, and bell pepper.
  5. Stir-fry for about 2-3 minutes until vegetables are tender but crisp.
  6. Return the chicken to the skillet, pour the sauce over the chicken and vegetables, and stir to combine.
  7. Cook for an additional 2 minutes until the sauce thickens slightly and everything is heated through, then serve immediately.
