Ingredients:
- 8 large eggs
- 2 cups cottage cheese, drained
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1 cup chopped spinach or kale
- 1/2 cup diced bell peppers
- 1/2 cup chopped onions
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh herbs (parsley or chives, optional)
- Additional cheese for garnish (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the baking dish with cooking spray or oil.
- In a large bowl, whisk together the eggs until well blended. Add the cottage cheese, shredded cheese, spinach, bell peppers, onions, oregano, garlic powder, salt, and pepper to the eggs. Stir until all ingredients are evenly combined.
- Pour the egg mixture into the prepared baking dish, spreading it out evenly.
- Place the dish in the oven and bake for 35-40 minutes, or until the center is set and the top is lightly golden.
- Insert a knife into the center; it should come out clean. (Internal temperature should reach 160°F / 70°C.)
- Allow to cool for a few minutes, then slice and serve warm. Optional: Top with fresh herbs or extra cheese before serving.
