Ingredients:
- 1 ½ pounds (680g) ground beef (80% lean)
- 1 cup (100g) breadcrumbs
- 2 large eggs
- ½ cup (120ml) milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 cups (150g) herb-seasoned stuffing mix
- 1 tablespoon fresh parsley, chopped
- ½ cup (120ml) chicken or vegetable broth
- 2 tablespoons (30g) unsalted butter, melted
Instructions:
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat. Sauté the onion and garlic until translucent. In a bowl, combine stuffing mix, sautéed onion and garlic, parsley, and broth. Mix well and set aside to absorb.
- In a large mixing bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix until just combined, being careful not to overmix.
- In a greased baking dish or loaf pan, form half of the meat mixture into a loaf shape. Create a well in the center and fill it with the stuffing mixture. Top with the remaining meat mixture, sealing the stuffing inside.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (71°C). Allow to rest for at least 10 minutes before slicing.
- Slice the meatloaf and serve it hot with your favorite sides.
