Ingredients:
- 1 lb (450g) albacore tuna steaks (about 1-inch thick)
- 2 tablespoons (30ml) olive oil
- Salt and pepper, to taste
- ¼ cup (60ml) soy sauce
- 2 tablespoons (30ml) honey
- 1 tablespoon (15ml) fresh lemon juice
- 1 tablespoon (15ml) fresh orange juice
- 1 teaspoon (5ml) grated ginger
- 1 garlic clove, minced
- 1 teaspoon (5ml) sesame oil
- 1 tablespoon (15ml) sliced green onions (for garnish)
Instructions:
- In a mixing bowl, whisk together soy sauce, honey, lemon juice, orange juice, ginger, garlic, and sesame oil until well combined.
- Season tuna steaks with salt and pepper. In a shallow dish, pour half of the glaze over the tuna and let marinate for 10-15 minutes.
- Heat the olive oil in a heavy-bottom skillet over medium-high heat until shimmering.
- Remove tuna from marinade and carefully place in the hot pan. Sear for 1.5–2 minutes on each side for medium-rare.
- In the last minute of cooking, brush remaining glaze over the tuna and let it caramelize slightly.
- Transfer to a cutting board and let rest for a few minutes. Slice and garnish with sliced green onions.
