Ingredients:

  • 1 box (15.25 oz) White or Yellow Cake Mix
  • 3 large Eggs
  • 1 cup Water
  • 1/2 cup Unsalted Butter, melted
  • 1 tsp Vanilla Extract
  • 1 cup Unsalted Butter, softened
  • 3 cups Powdered Sugar
  • 2 tbsp Heavy Cream
  • 1 tsp Vanilla Extract
  • 1 pinch Salt
  • 1/2 cup Rainbow Sprinkles

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x13 inch baking pan. In a large bowl, combine cake mix, eggs, water, melted butter, and vanilla; beat on medium speed for 2 minutes until smooth and pale.
  2. Pour batter into the pan, smoothing the top with a spatula, and bake for 22–25 minutes until edges pull away from the pan and a toothpick comes out clean.
  3. Let the cake cool completely in the pan for 20 minutes, then transfer to a wire rack.
  4. Use a 3-inch round cutter to press firmly into the cake to create 8 rounds.
  5. Whip softened butter and powdered sugar until light, then mix in heavy cream and vanilla.
  6. Pipe a dollop of frosting on a cake round, press a second round on top, and finish with a top layer of frosting.
  7. Press the sides of the assembled cakes into rainbow sprinkles for the final finish.
