Ingredients:

  • 1/2 cup old fashioned rolled oats (45g)
  • 2/3 cup milk of choice (160ml)
  • 1/4 cup plain Greek yogurt (60g)
  • 1 tablespoon chia seeds (12g)
  • 1 tablespoon pure maple syrup (15ml)
  • 1/2 teaspoon vanilla extract
  • 1 pinch sea salt
  • 1/4 cup fresh blueberries (37g)
  • 1 tablespoon almond butter (16g)

Instructions:

  1. Combine the 1/2 cup old fashioned rolled oats, 1 tablespoon chia seeds, and a pinch of sea salt in a 12 ounce mason jar. Shake or stir until the seeds are evenly distributed.
  2. Pour in the 2/3 cup milk, 1/4 cup Greek yogurt, 1 tablespoon maple syrup, and 1/2 teaspoon vanilla extract.
  3. Stir vigorously with a long spoon or spatula until no dry pockets remain at the bottom.
  4. Seal the jar tightly with its lid.
  5. Refrigerate for a minimum of 6 hours, ideally overnight (up to 12 hours) until the mixture is thick and set.
  6. Take the jar out of the fridge in the morning.
  7. Give the oats a good stir until the texture loosens and becomes creamy.
  8. Top with 1/4 cup fresh blueberries and 1 tablespoon almond butter.
  9. Eat immediately while cold to enjoy the contrast of textures.
