Ingredients:

  • 1 pound (450g) fresh asparagus, trimmed
  • 2 tablespoons (30ml) olive oil
  • 1 lemon, zested and juiced (about 1 tablespoon juice)
  • ¼ cup (25g) grated Parmesan cheese
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Optional: pinch of red pepper flakes

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Snap off the tough ends of the asparagus.
  3. In a bowl, toss asparagus with olive oil, lemon zest, lemon juice, Parmesan cheese, salt, and pepper.
  4. Spread the asparagus in a single layer on the baking sheet.
  5. Bake for 12-15 minutes, or until the asparagus is tender-crisp and slightly browned.
  6. Remove from oven and serve immediately.
