Ingredients:

  • 1 lb (450g) Lean Beef Mince (5% fat or less)
  • 1 large Yellow Onion, chopped
  • 4 cloves Garlic, minced
  • 1 large Red Pepper, diced
  • 1 medium Green Pepper, diced
  • 28 oz (800g) can Tinned Chopped Tomatoes
  • 1 cup (240ml) Beef Stock (low sodium)
  • 2 Tbsp Chilli Powder (mild/medium blend)
  • 1 Tbsp Ground Cumin
  • 1 Tbsp Smoked Paprika (Sweet or Hot)
  • 1 tsp Dried Oregano
  • 1 tsp Cocoa Powder (unsweetened)
  • 1/4 cup (60ml) Strong Black Coffee (cooled)
  • 1 Tbsp Worcestershire Sauce (or Syn-Free alternative)
  • 15 oz (425g) can Kidney Beans, drained and rinsed
  • 15 oz (425g) can Black Beans, drained and rinsed
  • 1 Fresh Red Chilli, finely chopped (or to taste)
  • Salt and Black Pepper to taste
  • Non-Stick Cooking Spray or 1 tsp Oil

Instructions:

  1. Lightly coat the base of your pot with cooking spray. Sauté the chopped onion and peppers over medium heat until softened (about 5–7 minutes). Add the minced garlic and cook for 1 minute until fragrant.
  2. Increase the heat slightly. Add the lean beef mince to the pot. Break it up with a spoon and cook until fully browned. Drain off any excess liquid if necessary.
  3. Reduce the heat to low. Stir in the chilli powder, cumin, smoked paprika, oregano, and cocoa powder. Cook, stirring constantly, for 1 minute until the spices smell deeply aromatic.
  4. Pour in the tinned tomatoes, beef stock, coffee, Worcestershire sauce, and the fresh chopped chilli. Stir well to combine everything, scraping up any browned bits from the bottom of the pot. Season with salt and pepper.
  5. Bring the mixture to a gentle simmer, then reduce the heat to the lowest setting. Cover the pot partially and let it bubble gently for at least 1 hour 15 minutes, stirring every 20 minutes.
  6. After the long simmer, stir in the drained and rinsed kidney and black beans. Continue to simmer, uncovered, for another 15 minutes to allow the beans to heat through and the sauce to thicken slightly.
  7. Taste and adjust seasoning as required. Serve piping hot, perhaps topped with fat-free Greek yogurt and fresh coriander.
