Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ¾ cup buttermilk
- 1 pound breakfast sausage
- ¼ cup all-purpose flour
- 2 cups whole milk
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
Instructions:
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in buttermilk until just combined.
- Turn out onto a floured surface, gently knead, and roll out to about 1-inch thick.
- Cut out biscuits and place on a baking sheet.
- Bake for 15-20 minutes until golden brown.
- In a skillet, crumble and cook the sausage over medium heat until browned.
- Remove excess fat, leaving about 2 tablespoons in the pan.
- Stir in flour until well combined, cooking for about 1 minute to remove raw flour taste.
- Gradually whisk in milk, stirring constantly until the gravy thickens.
- Season with salt and pepper to taste.
- Split open the biscuits and ladle the gravy over them.
- Enjoy while warm!
