Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup buttermilk
  • 1 pound breakfast sausage
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in buttermilk until just combined.
  5. Turn out onto a floured surface, gently knead, and roll out to about 1-inch thick.
  6. Cut out biscuits and place on a baking sheet.
  7. Bake for 15-20 minutes until golden brown.
  8. In a skillet, crumble and cook the sausage over medium heat until browned.
  9. Remove excess fat, leaving about 2 tablespoons in the pan.
  10. Stir in flour until well combined, cooking for about 1 minute to remove raw flour taste.
  11. Gradually whisk in milk, stirring constantly until the gravy thickens.
  12. Season with salt and pepper to taste.
  13. Split open the biscuits and ladle the gravy over them.
  14. Enjoy while warm!
