Ingredients:
- 2.5 lbs fresh peaches, peeled and sliced
- 0.75 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- 0.25 tsp ground nutmeg
- 1 tsp vanilla extract
- 1.5 cups all-purpose flour
- 0.5 cup granulated sugar
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 0.5 tsp kosher salt
- 0.5 cup unsalted butter, cold and cubed
- 0.33 cup boiling water
Instructions:
- Preheat oven to 400°F (200°C). In a large bowl, combine the sliced peaches, 0.75 cup sugar, lemon juice, cornstarch, cinnamon, nutmeg, and vanilla. Let sit for 15 minutes to macerate.
- Transfer the peach mixture to a 9x13 inch baking dish and bake for 10 minutes to soften the fruit.
- While peaches pre-bake, whisk together flour, 0.5 cup sugar, baking powder, and salt in a medium bowl.
- Use a pastry cutter to cut the cold butter into the flour mixture until it resembles pea-sized crumbles.
- Stir in the boiling water quickly until a thick, shaggy dough forms.
- Remove the hot peaches from the oven. Drop spoonfuls of the dough over the fruit. Sprinkle the remaining 2 tablespoons of sugar over the dough.
- Return to the oven and bake for 30-35 minutes, or until the topping is a deep mahogany brown and the fruit is bubbling.
