Ingredients:

  • 1 medium head green cabbage, finely shredded (about 6 cups / 500g)
  • 1 medium carrot, shredded (about 1 cup / 100g)
  • 1/2 medium white onion, finely chopped (about 1/2 cup / 75g)
  • 1/4 cup finely chopped fresh parsley (5g)
  • 1 cup mayonnaise (240ml)
  • 1/4 cup granulated sugar (50g)
  • 1/4 cup apple cider vinegar (60ml)
  • 2 tablespoons Dijon mustard (30ml)
  • 1 tablespoon lemon juice (15ml)
  • 1/2 teaspoon celery seed (2.5ml)
  • 1/4 teaspoon salt (1.5g)
  • 1/4 teaspoon black pepper (1.5g)

Instructions:

  1. Shred cabbage, carrots, and chop onion. Combine in the large mixing bowl.
  2. In a separate bowl, whisk together mayonnaise, sugar, apple cider vinegar, Dijon mustard, lemon juice, celery seed, salt, and pepper until smooth.
  3. Pour the dressing over the vegetables. Toss gently to coat everything evenly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to several hours. The longer it chills, the better the flavors meld.
  5. Before serving, taste and adjust seasoning as needed. Add more salt, pepper, or vinegar to your preference.
