Ingredients:
- 1 medium head green cabbage, finely shredded (about 6 cups / 500g)
- 1 medium carrot, shredded (about 1 cup / 100g)
- 1/2 medium white onion, finely chopped (about 1/2 cup / 75g)
- 1/4 cup finely chopped fresh parsley (5g)
- 1 cup mayonnaise (240ml)
- 1/4 cup granulated sugar (50g)
- 1/4 cup apple cider vinegar (60ml)
- 2 tablespoons Dijon mustard (30ml)
- 1 tablespoon lemon juice (15ml)
- 1/2 teaspoon celery seed (2.5ml)
- 1/4 teaspoon salt (1.5g)
- 1/4 teaspoon black pepper (1.5g)
Instructions:
- Shred cabbage, carrots, and chop onion. Combine in the large mixing bowl.
- In a separate bowl, whisk together mayonnaise, sugar, apple cider vinegar, Dijon mustard, lemon juice, celery seed, salt, and pepper until smooth.
- Pour the dressing over the vegetables. Toss gently to coat everything evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to several hours. The longer it chills, the better the flavors meld.
- Before serving, taste and adjust seasoning as needed. Add more salt, pepper, or vinegar to your preference.
