Ingredients:
- 6 cups fresh peaches, sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, chilled and cubed
- ¾ cup milk
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, and cornstarch. Toss gently to coat the peaches.
- Transfer the mixture to a greased 9x13 inch baking dish.
- Preheat your oven to 375°F (190°C).
- In a separate bowl, whisk together flour, baking powder, and salt. Cut in chilled butter until mixture resembles coarse crumbs.
- Stir in milk and vanilla extract until just combined.
- Spoon dollops of the dough over the peach filling, covering as much as possible.
- Place the dish in the oven and bake for 30-40 minutes, until topping is golden and filling bubbles.
- Allow to cool for about 10 minutes before serving.
