Ingredients:

  • 6 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed
  • ¾ cup milk
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, and cornstarch. Toss gently to coat the peaches.
  2. Transfer the mixture to a greased 9x13 inch baking dish.
  3. Preheat your oven to 375°F (190°C).
  4. In a separate bowl, whisk together flour, baking powder, and salt. Cut in chilled butter until mixture resembles coarse crumbs.
  5. Stir in milk and vanilla extract until just combined.
  6. Spoon dollops of the dough over the peach filling, covering as much as possible.
  7. Place the dish in the oven and bake for 30-40 minutes, until topping is golden and filling bubbles.
  8. Allow to cool for about 10 minutes before serving.
