Ingredients:

  • 1 cup (200g) fresh raspberries
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 2 ounces (60ml) good quality gin (London Dry style recommended)
  • 1 ounce (30ml) fresh lemon juice
  • 0.75 ounce (22ml) Raspberry Simple Syrup
  • 3-4 ounces (90-120ml) chilled sparkling water or club soda
  • Fresh raspberries and lemon wedges, for garnish

Instructions:

  1. Make the Raspberry Simple Syrup: Combine raspberries, sugar, and water in a small saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves and the raspberries break down. Simmer for 5 minutes.
  2. Strain the Syrup: Pour the mixture through a fine-mesh strainer, pressing on the solids to extract as much flavor as possible. Discard the solids. Let cool completely. (Can be made ahead and stored in the refrigerator for up to 2 weeks.)
  3. Chill the Glass: Fill a cocktail glass with ice.
  4. Combine Ingredients: In a cocktail shaker, combine gin, lemon juice, and raspberry simple syrup. Add ice.
  5. Shake Vigorously: Shake well until the shaker is thoroughly chilled (about 15-20 seconds).
  6. Strain and Pour: Remove the ice from the chilled glass. Strain the cocktail into the glass.
  7. Top with Sparkling Water: Top with chilled sparkling water or club soda.
  8. Garnish and Serve: Garnish with fresh raspberries and lemon wedges. Serve immediately.
