Ingredients:
- 1 medium sweet potato (approximately 8-10 ounces / 225-280g), scrubbed clean
- 1 teaspoon (5g) unsalted butter, or plant-based butter alternative (e.g., Flora Plant Butter)
- Pinch of sea salt, or to taste
- Optional: Freshly ground black pepper, to taste
Instructions:
- Pierce the sweet potato all over with a fork (5-6 times) – this lets the steam escape!
- Place the sweet potato on a microwave-safe plate. Microwave on high power for 5-8 minutes, depending on its size and your microwave's wattage.
- Carefully remove the sweet potato from the microwave (it will be HOT!). Use a fork to test for doneness. It should be easily pierced through the centre. If not, microwave for another 1-2 minutes.
- Slice the sweet potato open lengthwise. Add butter and salt (and pepper, if using) to the flesh. Mash slightly with a fork to help the butter melt and evenly distribute the seasonings.
- Serve immediately, enjoying the warm, tender sweet potato.
