Ingredients:
- 1 (15-ounce/425g) can cannellini beans, rinsed and drained
- 1/4 cup (60ml) extra virgin olive oil
- 2 tablespoons (30ml) fresh lemon juice
- 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
- 1/4 cup (packed) chopped fresh parsley
- 2 tablespoons chopped fresh mint
- 1/4 cup (30g) thinly sliced red onion
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions:
- Rinse the cannellini beans in a colander under cold running water. Drain thoroughly.
- In a mixing bowl, combine the drained beans, olive oil, lemon juice, minced garlic (or garlic powder), parsley, mint, red onion, and red pepper flakes (if using).
- Season generously with salt and freshly ground black pepper to taste.
- Gently mix all the ingredients until well combined. Be careful not to mash the beans.
- Serve immediately or chill for later.
