Ingredients:

  • 1 (15-ounce/425g) can cannellini beans, rinsed and drained
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • 1/4 cup (packed) chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1/4 cup (30g) thinly sliced red onion
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Rinse the cannellini beans in a colander under cold running water. Drain thoroughly.
  2. In a mixing bowl, combine the drained beans, olive oil, lemon juice, minced garlic (or garlic powder), parsley, mint, red onion, and red pepper flakes (if using).
  3. Season generously with salt and freshly ground black pepper to taste.
  4. Gently mix all the ingredients until well combined. Be careful not to mash the beans.
  5. Serve immediately or chill for later.
